Based in Meursault in the heart of Burgundy, Domaine Henri Boillot is a benchmark estate in the Côte de Beaune. Founded in 1885 by Henri Boillot's grandfather, this 19-hectare family domaine has established itself as one of the finest producers of white and red Burgundy wines. Specialising in the appellations of Puligny-Montrachet, Meursault and Volnay, the estate crafts primarily Chardonnay and Pinot Noir from prestigious Premier Cru sites. Today, Henri Boillot and his son Guillaume form a complementary duo — one vinifying the whites, the other the reds — united by a common goal: to reveal the purity and singularity of each terroir.

L'histoire du domaine

Domaine Henri Boillot is rooted in a remarkable family lineage dating back to 1885, when Henri Boillot's grandfather laid the foundations of the estate in Volnay. As Henri Boillot himself recounts, "the Boillot family truly began winemaking activity at the very beginning of the last century — my grandfather Henri was the first to work the vines in the family, and my father Jean was the great developer of the Domaine". In 1975, Henri joined his father's estate and worked his way up through the ranks before becoming the domaine's full winemaker. A visionary, he established his own négociant business in 1995, Maison Henri Boillot, which enabled him to vinify grapes from Grand Cru parcels without owning the land. The year 2000 saw the construction of a new modern winery in Meursault, followed in 2005 by the acquisition of his brother and sister's shares, allowing Henri to keep the estate intact and rename it Domaine Henri Boillot. In 2008, his son Guillaume joined the domaine, and by 2012 he had become head of viticulture and took charge of red wine vinification — a transmission of knowledge embodying the sixth generation of Boillot winemakers.

Le terroir

Based in Meursault, Domaine Henri Boillot occupies a strategic position between Puligny-Montrachet and Volnay, two iconic terroirs which have become the estate's speciality. The vineyard extends over 19 hectares, evenly divided between whites and reds, with a strong proportion of Premier Cru sites. The soils of Puligny-Montrachet are brown limestone where marly clay-limestone banks alternate, sometimes deep or directly on hard rock, giving the white wines their crystalline purity and striking minerality. The Volnay terroirs rest on limestone terrain supporting schistous beds at an altitude of 230 to 280 metres, conferring upon the red wines a unique aromatic intensity and finesse. The estate's most emblematic parcel is Clos de la Mouchère, a 3.96-hectare monopole enclosed within the Premier Cru Les Perrières in Puligny-Montrachet, whose vines displayed an average age of 83 years in 2021. The viticultural philosophy is based on sustainable farming with no insecticides or herbicides, maintaining a planting density of 10,000 vines per hectare to favour concentration. Contrary to common practice in the Côte de Beaune, Henri Boillot and Guillaume exclusively use 350-litre barrels and avoid bâtonnage for white wines in order to preserve their vibrant freshness.

Les vins

The Domaine Henri Boillot range comprises around twenty cuvées drawn exclusively from the Côte de Beaune, of which 80% are white and 20% red. The white wines in Chardonnay are built around Premier Crus from Puligny-Montrachet — Clos de la Mouchère (monopole), Les Perrières, Les Pucelles — and from Meursault — Clos Richemont (monopole), Les Genevrières, Les Gouttes d'Or. In red, the domaine excels on the Premier Crus of Volnay — Les Caillerets, Les Chevrets, Les Fremiets — and Pommard — Clos Blanc. The négociant structure of Maison Henri Boillot, established in 1995, allows the range to be complemented with Grands Crus from both Côte de Beaune and Côte de Nuits: Corton-Charlemagne, Bâtard-Montrachet, Chambertin Clos de Bèze, Bonnes-Mares, Latricières-Chambertin. The Boillot style is immediately recognisable: white wines that are straight, taut, precise, pure and elegant, endowed with vibrant acidity and chalky minerality; red wines characterised by their finesse, elegance, sensuality and silky texture — wines that can be enjoyed young whilst possessing remarkable ageing potential.

Le vigneron

Henri Boillot embodies the fifth generation of winemakers in this Burgundian family rooted in the vine since 1885. Trained under his father Jean, he worked his way up through every level before taking the helm of the estate in 1975, developing over the decades a personal vision anchored in the pursuit of excellence. Passionate, honest, and dedicated, Henri today focuses on the vinification of whites that he wants straight, taut, precise, pure, and elegant — an immediately recognisable signature that has placed his wines among the greatest names of the Côte d'Or. At his side since 2008, his son Guillaume embodies the new generation: having worked his way up through every level, he is now head of viticulture and winemaker for the estate's red wines. With subtlety, Guillaume has managed to infuse his own style and reveal the grandeur of terroirs such as Volnay, favouring elegance, sensuality, roundness, and finesse. Together, father and son form a balanced duo where the transmission of knowledge and the fruit of their exchanges contribute to the estate's continuity — "one in white, the other in red," both driven by the same obsession: producing wines that tell a story, wines that have a soul.
