Domaine Gavoty is a family estate located in Cabasse, in the Var department, at the heart of the Côtes de Provence appellation. Since 1806, eight generations have succeeded one another on this 50-hectare clay-limestone terroir, certified organic since 2020. A pioneer in introducing Rolle to Provence in the 1970s, the domaine is renowned for its age-worthy whites, structured rosés, and rare, elegant reds. Roselyne Gavoty continues this family legacy today, with emblematic cuvées such as Clarendon, Grand Classique, and Premier Rôle.

L'histoire du domaine

The history of Domaine Gavoty begins in 1806, when Philémon Gavoty acquired the property in the hamlet of Campdumy — "harvest fields" in old Provençal — along the Via Aurelia, the ancient Roman road of which a milestone dating from the time of Nero still bears witness, now on display in the estate's tasting cellar. For nearly two centuries, eight generations have followed one another, combining polyculture and viticulture on this demanding terroir in the central Var. In the 1960s, Pierre Gavoty took over the Grand Campdumy while his cousin Bernard Gavoty, music critic for Le Figaro under the pseudonym Clarendon and holder of the Great Organ at Les Invalides, inherited the Petit Campdumy: together, they joined forces to defend the emerging Côtes de Provence appellation and elevate the estate's reputation. It was Pierre who, in the 1970s, boldly introduced Rolle — the future emblem of great Provençal whites — to these Triassic soils. In 1985, Roselyne Gavoty, Pierre's daughter, took charge of winemaking and brought new commercial momentum; in 2001, she assumed full control of the operation alongside her husband Hervé. Since 2020, the domaine has taken a further step with organic certification, and a new generation has begun to join the adventure from 2022 onwards.

Le terroir

The Domaine Gavoty vineyard spans 50 hectares in a single block in Cabasse, in the heart of the Var hills, in an area renowned for its climatic extremes: scorching summers, harsh winters that can drop to -10°C at night, and very pronounced day-night temperature variations that give the wines freshness and ageing potential. Separated from the Mediterranean by the Maures massif, the estate benefits from a continental climate with frequent challenges — spring frosts, drought episodes — that the vines face with resilience. The soils, originating from the Triassic period, rest on porous dolomitic limestone and clays with strong water retention capacity, allowing roots to dig deep. The vineyard, certified organic since 2020, is surrounded by 100 hectares of forests of holm oak, white oak, and pine, creating an ecosystem rich in biodiversity. Natural grass cover, indigenous yeasts, drastic reduction of inputs: Roselyne Gavoty has gradually evolved practices towards respectful viticulture, faithful to the peasant methods that prevailed when Philémon acquired the estate in 1806. The grape varieties cultivated — Rolle, Cinsault, Grenache, Syrah, Carignan, with touches of Cabernet Sauvignon, Merlot, Ugni Blanc, and Clairette — are planted on the many slopes and exposures of the terroir.

Les vins

The Domaine Gavoty range is built around three colours — 60% rosés, 25% whites, 15% reds — for a total production of approximately 250,000 bottles per year. The whites, made primarily from Rolle (Vermentino), constitute the estate's historic signature: introduced by Pierre Gavoty in the 1970s, this grape variety has adapted magnificently to the estate's clay-limestone soils. The Clarendon Blanc cuvée, from Rolle vines planted in 1981, is unanimously acclaimed by critics as one of the greatest whites of Provence, endowed with brilliant minerality, fleshy structure, and ageing potential of 10 to 15 years. The Premier Rôle cuvée also celebrates this signature grape with roundness and tension. The rosés, made by maceration for a few hours then blending of saignée and press juice, combine vinosity and saline freshness: Grand Classique (Cinsault, Grenache, Carignan) offers remarkable balance, while Clarendon Rosé, from the estate's oldest vines (Grenache, Syrah, Carignan from the 1960s), displays textural richness and ageing capacity rare for the appellation. The reds, produced only in exceptional years, reveal singular elegance and freshness after several years of cellaring: Hautbois Solo (Syrah, aged in 400-litre barrels) and Storia (Syrah and 40-year-old Carignan) embody this exigency. Finally, the La Cigale cuvée, in Vin de Pays du Var, offers a gourmand and saline entry-level wine.

Le vigneron

Roselyne Gavoty embodies the continuity and renewal of a family estate rooted in the Var for more than two centuries. Daughter of Pierre Gavoty, she took charge of winemaking in 1985 and gave decisive commercial momentum to the property, before assuming full management in 2001 alongside her husband Hervé. Driven by a deep conviction — that Provence can produce age-worthy white wines and terroir-driven reds capable of rivalling the greatest French appellations — she has gradually evolved the estate towards organic agriculture, certified in 2020, reintroducing indigenous yeasts, natural grass cover, and drastic reduction of inputs, in a spirit of return to peasant practices. A demanding and pioneering winemaker, she has preserved and elevated her father's legacy with Rolle while building a range of structured rosés that resolutely distance themselves from the conventional codes of the appellation. Recognised by the most prestigious guides — Guide Hachette, Revue du Vin de France, Bettane & Desseauve (4 stars), Wine Advocate — and featured on the wine lists of France's finest tables, Roselyne Gavoty has elevated the domaine to the rank of essential references in Provence winemaking. A new generation has begun to join the adventure from 2022 onwards, ensuring the continuity of an estate that has never ceased to reinvent itself.
