Twenty of Domaine Gavoty's fifty hectares are classified as Vin de Pays du Var, situated on flatter land than the slopes reserved for their Côtes de Provence cuvées. The estate extends across the commune of Cabasse, in the central Var, at the lieu-dit Campdumy — 'harvest fields' in old Provençal — along the Issole River. The clay-limestone soils provide the vines with solid anchorage, while the surrounding 100 hectares of oak and pine forests preserve rich biodiversity. The continental climate with marked thermal amplitudes — cold winters, hot summers tempered by the mistral — imposes natural discipline on the vine.

Domaine Gavoty has been farmed under certified organic agriculture since 2018, with grassing of every other row and soil tillage to preserve microbial life. The La Cigale cuvée is based on a maceration technique characteristic of the estate, which favours the extraction of fruity aromas. The grapes macerate immediately after harvest, then alcoholic fermentation takes place over 12 days at a controlled temperature of 17°C. Ageing is exclusively in stainless steel tanks, with no oak influence, to preserve the purity of fruit and the wine's natural vivacity. Bottling takes place in March following the harvest.
