Monte Bianco is rooted in an old-vine plot of Sciaccarello facing due north — hence the cuvée's name, referring to the pale, whitish granite — located in the Taravo valley south of Ajaccio, at approximately 100 to 150 metres elevation. The terroir consists of granitic arenas, sandy decomposed granite that imparts chalky minerality and tension to the wines. These poor, free-draining soils force the vine to dig deep, yielding concentration and expression. The northerly exposure preserves the aromatic freshness of Sciaccarello, Corsica's signature red grape.

Domaine Comte Abbatucci has practiced Demeter-certified biodynamic viticulture since 2000, with horse-drawn ploughing, permanent natural cover cropping, and winter grazing by a flock of sheep treated homeopathically. Harvest is exclusively manual, using small-capacity trailers to preserve fruit integrity, followed by systematic sorting in the vineyard and cellar. Grapes are received by gravity, destemmed but not crushed, then vinified in temperature-controlled truncated wooden vats. Maceration lasts approximately one month, with daily punching down and pumping over, spontaneous fermentation with indigenous yeasts. Ageing proceeds for 12 months in foudres and 600-litre demi-muids, followed by 6 months in stainless steel tanks before bottling. A minimum 6-month post-bottling rest is recommended before release.
